Lemon Butter Baked Cod
This was a "new" to us recipe that I tried for dinner... tasty and super easy!
I had about a pound and a half of cod loins, four of them that I thawed out, rinsed and patted dry.
I squeezed the juice out of one lemon into a dish and added about a half of stick of melted butter.
In another pan, I mixed together 1/2 cup of flour, 1/2 tsp of salt,
1/2 tsp of pepper and 1/2 tsp of paprika.
1/2 tsp of pepper and 1/2 tsp of paprika.

I dipped the fish in the lemon butter, then rolled it in the flour mixture. Then, I placed them into a baking dish. When they were all done, I poured the lemon mixture over it.
I baked them at 350 for about 30 minutes. That's it!
The fish flaked beautifully, and I served it with glazed carrots and mashed potatoes.
I did pour a little of the pan juices over the fish when I served it.

I think I liked it more than the hubster or Miss Sarah. She was put off with the lemon flavor...
he just compares everything to the fried fish he gets at the Seafood Center once in a while.
{sigh}
