What EGGactly can I do?

Six cereal meal deals means last week means six packs of eggs...that is a LOT of eggs for three people to eat!

Are you wondering what will I do with 6 dozen eggs? that is 24 eggs, per person in this house... eesh!

First of all, the obvious things like fried egg sandwiches for lunch, omelettes for Sunday brunch and a "backwards day" where we have breakfast for dinner!

Then, bake.
Cookies, cupcakes and a few other yummy treats should kill off at least a dozen...then I go to "plan B"

Quiche.
It's a great way to use up small amounts of leftover veggies and meat - the recipe is on my recipe page.

Hard boiled eggs.
Great shot of protein when you need a quick snack or pick up. You can boil them, peel them and then freeze them! If you are planning on potato salad or egg salad, simply thaw them in your fridge the night before. Here, you ca see I bagged them up in sets of two to freeze.Scrambled Eggs.
You can pre-scramble eggs and freeze them too...raw or cooked. Simple to add to everything from breakfast burritos to fried rice.

Freeze them.
Yup they freeze, you just peel them first.

I put a raw egg in each cube of an ice cube tray...and freeze the tray for an hour or two, them pop them out. You now have frozen eggs that you can put in a different container and they aren't all ...stuck together! Just leave them room temp to thaw and you are ready to rock for baking, frying, whatever.

That should hold us for a bit, what is YOUR favorite way to use up eggs?
