I am finally out of Jam in this house!  I realize that I didn't make ANY jam last year, so the jam we just ran out of was from the summer two years ago and it really lasted a long time. This is jam year. (apparently) Good thing that the rhubarb is flourishing and I have plenty of empty jars. Today is a simple recipe - that is pretty darned sweet.  If you don't like sweet jam, skip this recipe and try the next on I will post. :) 5 cups chopped fresh rhubarb 4 cups white sugar 1 (20 ounce) can crushed pineapple, drained (or use two small cans and 1/2 cup more rhubarb) 1 (6 ounce) package strawberry flavored gelatin  (or two 3oz pkgs)  In a large saucepan or stock pot, combine the rhubarb, sugar and pineapple. Bring to a boil over medium-high heat. Boil for 10 minutes, stirring frequently. Jars can be sterilized at the same time. It used to be a standard $1.99/# for ground beef - it is now $.50 higher and we look for a good sale to get it for less! Thanks to the new Food Pyramid, we are supposed to be eating LESS meat than we were originally told to. This is also recommended by the American Diabetes Association, American Cancer Association and American Heart Association. If a recipe called for one pound of ground beef, you really should use half of that. Add beans or rice to the taco/burrito/enchilada meat. One of the perks of being a class parent, is the job of collecting cash from the other parents for teacher gifts. When you are told to get gift cards, you know you are going to use it for pumping your individual transactions up to that $25 threshold.   I had to get two gift cards today - and then one for the giveaway on my blog :)   I would have shared my plan in advance, but seriously, I worked it out 10 minutes before leaving for the store today. Miss Sarah and I snuck out first to the local Dollar Tree - to get a few extra Sunday Papers.
