Casserole Magic!
In my Meal Planning 101 Class, I talk about casseroles as being a good way to stretch the budget, not only by using oftentimes FREE pasta to be your base, but using leftovers to be your building blocks.
Then you need some protein.
Here, we used some tuna (FREE from couponing).
Of course, my four year old thinks we used Diplodocus Meat
(it's a dinosaur...ask your four year old, they will know).
**spell check does NOT like Diplodocus...just an FYI

Now some veggies: leftover green peas and
Sauteed onions.
Now you need some kind of sauce.
I used two of these (again, FREE from coupons):
Mix it all together, add a little salt and white pepper.
As this was seafood, I also added a bit of garlic powder and dill.
You should have enough to fill TWO casseroles (cook once, eat twice).
Our second casserole went to the Peterson family.
Cover with some cheese and bake at 350 for an hour or so.
Now rip into it like a monkey on a cupcake!
OK...
Set the table, make a nice fluffy green salad, put on some great music and have a super meal with the family
