Frugal Friday : Freezing Eggs

One of the most surprising things in my coupon class is when I talk about how having a chest freezer helps you take advantage of sales and stock up yogurt, cheese, milk and eggs. People seem so surprised to hear that you can freeze eggs!

Yes, eggs can be frozen for later use, but there is a quick trick: Peel them first!

OK, that is a silly way of saying to take them out of the shells before freezing as they expand a little and would break them. To freeze whole eggs, crack the egg and beat until just blended, then freeze individually or together. Ice Cube Trays and muffin tins work well to freeze them individually, then pop them out and store in a Tupperware FreezerMate or Ziploc bag once frozen.

To use, simply thaw in refrigerator. If you froze them together, about 2 tablespoons of the slightly blended egg mixture will equal about one large egg.

I also freeze hard boiled eggs -- and shell them.They turn a funky color in the freezer but look normal again when thawed. They won't be "pretty" - but are perfect to dice for salads...NOT for making things like deviled eggs.

Easter is normally a great time to stock up on eggs -- lots of great deals on them during LENT. We also get them FREE with the cereal deals that the Roundy's Stores usually have (almost monthly).
