Amish Friendship Bread: Lemon Poppy Seed Muffins
This is one that I simply LOVE to make - it gives that sweet, yet tangy smell to the house as you are baking.

Looking at my picture - you can see that we have two kinds of people in the house: Those that like things "crunchy" and those that like things soft. The difference is simply 3 more minutes in the oven, LOL!
SO easy to make - again, with that sourdough starter on day #10!
Ingredients
1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
1/2 cup milk
1 cup sugar
1-2 teaspoons lemon extract
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups flour
1 small box lemon instant pudding
2 tsp poppyseeds
Zest of one lemon (for mixing with 1/4 Cup sugar and putting on top of the batter before backing as topping)
Preheat oven to 325° F (165° C).
In a large mixing bowl, add ingredients as listed. (not the lemon zest) You can grease and sugar the muffin tins or use cupcake wrappers like I do (Yes....I know they are "Christmassy" - they were holiday clearance, LOL) Pour the batter evenly into muffin tins. Sprinkle the tops with that mixture of sugar and grated lemon zest. Bake for 20-25 minutes and remove to cool.
It makes about 2 dozen and your home will smell A-MAZ-ING!
