Jell-O Poke Cake
This is an oldie, but a goodie.
I always seem to pull it out of my files when the weather is warmer
as it is a light, cool, refreshing treat.

SUPER easy to do!
Start by baking a 9x13 cake - yellow or white.
Then, as it cools, whip up 6oz of Jell-O, per the box instructions.
I prefer lemon or lime, but any flavor will do.
Pop that Jell-O in the fridge for a bit to start thickening.
As the cake cools, use the back of a handle to poke holes in it.
Then pour your slightly thickened Jell-O over it, aiming mostly for the holes.
"Frost" it quick with Cool Whip or Fresh Whipped Cream
Simply chill until ready to slice and serve.
Yum!
**You CAN make this slightly healthier...
Use egg whites instead of whole eggs, use Fat Free Cool Whip and Sugar Free gelatin.
