Beer (Beef) Stew in the Crock Pot!

This is a SUPER easy and tasty way to reinvent the left over pot roast dinner (uses beer)
that you had a few nights ago!
Now, your family isn't eating left over pot roast,
they are having beef stew over biscuits!

In the crock pot, put 3-4 peeled and diced potatoes.
Also toss in 2-3 carrots that are peeled and sliced into coins.
(They simply look nicer than "sticks" in the finished product).
Add your leftover gravy, and 1 cup of water.
(If you don't have any left over gravy,
you can do the packet with 1 cup water blended in and add that 2nd cup)
Add a can of diced tomatoes, juice and all - I prefer the "petite diced".
Let rip on low for 3-4 hours.

Easy enough so far?
Now, stir in 1 cup of frozen peas, 1/2 tsp garlic and your left over pot roast - shredded.

Let rip at least one more hour.
If it isn't thick enough for you... just add a little instant mashed potatoes
(or left over mashed potatoes) to it.
You won't have that "floury" taste.
:)

Now, split a biscuit and ladle some of this rich goodness over it...
Ahhh.........delicioso!
