Killer Corn Muffins!

It's fall!
Soup, Stew, Chili -- dust those recipes off or try one of mine! (from HERE)

They always need something yummy to go with it and our favorite, if we are having chili, is corn muffins!

One of the oldest around and SUPER inexpensive is the
Jiffy brand corn muffin mix.
You can catch it on sale 3/$1.00 or 4/$1.00 and stock up.

Just one thing...
If you follow the recipe on the box, they are just O.K.

Who wants just O.K. cornbread for their family - right?

Here is how you fix it:


Add to the mix:
2 eggs, not just the 1 that they say.
1/3 cup milk, like they say.
1 Tbsp sugar.
2 Tbsp veggie oil.
Mix it all together and drop in your paper lined muffin cups.

Bake at 400 degrees, like they say, for 15 to 18 minutes and you have a
heavenly treat to share with your loved ones.

For pennies.

Gotta love that - right?

Chili Dog Casserole

I know this sounds strange -- and yummy at the same time, LOL You need to know the family history to "get it". We are part German, part English, part Irish and part Tennessee Hillbilly. Seriously. Did you ever see that black and white movie of Gary Cooper's called Sergeant York? Yes, my family comes from the Dyer/Yorks -- same family. Some of the "family recipes" are too far out there for even me to try... But this is a pot luck favorite. SUPER Easy and SUPER Easy to make healthier. We choose the middle of the road option, LOL You need:  1 package hot dog buns (8 ct) 1 package hot dogs 2 cups chili (or 1 can) 2 cups shredded sharp cheddar cheese "fixins" That's it! You could do gluten free or whole grain wheat buns, turkey or tofu dogs, vegetarian chili, vegan or light cheese, you get the drift.
