Easy Peasy Banana Muffins

We love this recipe because it is simple,
the muffins are wonderfully moist and that cinnamon/vanilla really add a nice layer of flavor.

They are Miss Sarah's favorite
and super easy for her to help me make.

It makes 12 larger sized muffins
but you could easily double the recipe.

These freeze well too!
 
Ingredients
  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • 3 large, very ripe bananas, mashed
  • ¾ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ⅓ cup butter, melted
Sift together the flour, baking powder, baking soda, salt and cinnamon. 
 
In a different bowl, combine bananas, sugar, egg, and melted butter. Fold in flour mixture, and mix until smooth. Be careful not to OVER mix as it will cause tunnels in the finished product. Scoop into muffin pans.
 
Bake in preheated oven  for 25 to 30 minutes. Muffins will spring back when lightly tapped.

We hope you like them as much as we do - they don't even need butter!
