Magazine Challenge part 1

I now know that I COULD have shared my 30 journey with you for the challenge that All You magazine put out there. My paperwork is all in and awaiting review, it is entirely too munch info for one post so, I will give it to you in weekly summaries. Here is my first week:

All You Grocery Challenge

Sunday, June 20th – Father’s Day
Breakfast: Cut strawberries, Slice of Brownberry Health Nut Bread, Glass of milk
Lunch: Free meal at church: Baked chicken on a stick, BBQ ribs, green salad, veggie tray, watermelon, lemonade
Snack: Banana
Dinner: Free meal at Texas Road House: 6 oz sirloin Steak, Sweet Potato with butter, green salad, water. She ate salad, Mac N cheese, apple sauce, white milk

Monday, June 21st – Interpreter Dinner, Circle of Love
Breakfast: Cut strawberries, glass of milk
Lunch: Cold plate: String cheese, oyster crackers, diced cooked cold chicken breast, apple slices
Snack: yogurt
Dinner:Free meal at Martin house! We brought deviled eggs and a cheese ball with wheat crackers. They served: Burgundy peppercorn grilled steaks, skillet potatoes, Caesar salad, and garlic toast. Fresh fruit plate for dessert.

Tuesday, June 22nd
Breakfast: 1 scrambled egg with ketchup, diced cantaloupe, and milk
Lunch: Peanut butter and homemade jam (Strawberry – mulberry) on Brownberry Health Nut Bread, baby carrots, glass of water
Snack: apple
Dinner:Lasagna ravioli (ground flax added to it), Cesar salad, iced tea, garlic bread (Half of Lasagna went to the chest freezer)

Ravioli Lasagna Recipe
2 packages refrigerated Beef and Sausage Ravioli, prepared according to package directions*
1 (15oz) package reduced-fat ricotta cheese
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 large eggs, lightly beaten
1/3 cup fat free milk
1 can (15 ounces each) Spaghetti Sauce (I use Hunt's)
1/4 cup (.75 ounce) Freshly Shredded Parmesan Cheese

Preheat oven to 350° F. Lightly grease a 9x13 pan. Combine ricotta cheese, spinach, eggs and milk in medium bowl. Place half pasta in bottom of prepared dish. Add half sauce and all of the ricotta mixture. Top with half remaining pasta and half remaining sauce. Sprinkle with Parmesan cheese. COVER with foil. Bake for 40 to 45 minutes or until heated through. Let stand for 10 minutes before serving to prevent it from being a sloppy mess when you dish it up.
*You can use just plain cheese ravioli, but you will want to add a bit of Italian Seasoning to the sauce to give it a bit more flavor.

Wednesday, June 23rd
Breakfast: Breakfast cookies, glass of milk
Lunch: Leftover Cesar salad with cooked, diced chicken breast, mandarin orange slices and red onion
Snack: watermelon
Dinner: Tuna melts with tomato on Brownberry Health Nut Bread

Got:
• 6 boxes of Cereal (2 Fiber one, 3 Chex, Golden Grahams)
• 2 gallons of skim Milk
• 2 packages Nabisco Chips Ahoy Cookies
• 5 packs Scotties tissue**
• 6 Pillsbury croissants
• 4 Skinny Cow Single serving
• 3 hunts snack pack chocolate pudding
• 2.12 # red Grapes
• English muffins
• Charmin TP**
• 4 pack yogurt – YoPlus lite
• Shredded cheese
• 2 # butter
Spent $29.46 Saved $64.97 (69%) AND I got coupons for a FREE gallon of milk and FREE dozen eggs!
** = NON-food items counted in total

Thursday, June 24th
Breakfast: Diced Cantaloupe, hardboiled egg, water
Lunch: Peanut Butter and homemade jelly on whole wheat, baby carrots, homemade applesauce
Snack: Yogurt
Dinner: Whole wheat flat noodles, fettuccine/scallop scampi with peas

****Grocery Shopping Today (HyVee)
Got:
• 2 dozen eggs
• 2 bags coleslaw mix
• 2 Skippy Peanut Butter
• 3 pack French bread (double loaves)
• 1 cantaloupe
• 1 pound baby carrots
Spent $9.38 Saved $8.56 ( 51 %)

Friday, June 25th
Breakfast: Rice Chex with fresh blueberries (from back yard), skim milk
Lunch: Grilled brats (no bun) diced watermelon and cantaloupe
Snack: cheddar cheese and apple slices
Dinner – out with my visiting sister!-->Fish Fry at the Owl’s Nest. Baked cod, baked potato, baked beans, coleslaw, dinner rolls, milk (Sarah had Mac n cheese)

Saturday, June 26th
Breakfast: Scrambled eggs, wheat toast, apple juice/water 50/50. (Ketchup for the eggs)
Lunch: Sliced apple, yogurt, diced chicken, gluten free crackers
Snack: fruit chiller (strawberry)
Dinner: Leftover ravioli lasagna with French bread


****Grocery Shopping Today (Copp’s Double Coupon day)
Got:
• Reynolds’ Wrap Foil
• Creamette Angel Hair Pasta (1 pound)
• Kraft Zesty Catalina salad dressing
• 2 strawberry Fruit Chillers
• 2 Welch’s 100% juice (red grape)
• 1.61 pounds bananas
• Extra large eggs (dozen)
• 3 Tropicana 50/juice (1 oj, 2 pomegranate and blueberry)
Spent $8.27 Saved $26.17 (76%)

So this ends week one, I have spent $37.56 and we have eaten pretty well! I do believe that we have come in at about 50% of the allotted budget so far!
