Cookie Recipes

Here are the recipes that I shared with the viewers of NBC15 on the segment I taped this week. The "cheat" roll out cookies are actually super easy and yummy!

ANDES CANDIES COOKIES
3/4 c. butter
1 1/2 c. brown sugar
2 tbsp. water
12 oz. chocolate chips
2 (6 oz.) boxes Andes Creme de Menthe candies
2 eggs
2 1/2 c. flour
1 1/4 tsp. baking soda
1/4 tsp. salt

Combine butter, brown sugar, and water in a quart measuring cup suitable for the microwave. Microwave on High power 2 minutes. Stir, add chocolate chips, and stir again until chocolate chips are melted. Let stand 10 minutes. Meanwhile, unwrap and halve each candy; set aside.

Beat eggs in mixer bowl. Add cooled chocolate mixture. Sift together flour, soda, and salt; add to mixing bowl. Beat on low speed until ingredients are just blended. Chill dough 1 1/2 hours. Roll into balls and place on ungreased cookie sheets.

Bake at 350 degrees for 7-8 minutes or until cookies are done. Remove from oven and immediately place half a mint on each cookie. Let stand 2 minutes or until candy will spread. Spread chocolate over cookie. Remove cookie to a cooling rack. Makes 60-70 cookies.


Cake Mix Drop Cookies
One 18.25 oz box of cake mix
2 eggs
1/2 cup water
1/4 veggie oil
     Combine all ingredients in a large bowl. Add 1 Cup of "filler". Drop by teaspoonful onto a greased cookie sheet. Bake at 350 for about 15 minutes.
**"Filler" ideas: M&Ms, chocolate chips, butterscotch chips, chopped nuts, etc.

Cake Mix Cut Out Cookies
1 (18 ounce) package yellow cake mix
3/4 cup butter, melted and cooled
1 large egg
2 tablespoons milk (plain or evaporated)
     In a large bowl mix cake mix, butter, egg and milk, being careful to not over mix. Shape dough in a ball. Chill for 2 hours. Roll 1/8 inch on a floured surface and cut out with a floured cookie cutters. Place 2 inches apart on a cookie sheet that has been very lightly sprayed with cooking spray. Bake at 375 degrees for 6-10 minutes or until edges are lightly browned. Cool slightly then move to rack to cool fully.
**You can created two "logs" with this instead and have your own "slice and bake" cookies.
