Amish Friendship Bread: Pancakes!

If you have been playing along with us - today is day #10! It's time to feed and then bake some yummy goodness!

This recipe uses two cups of the "starter" and makes about 16 pancakes that are roughly 4-5" big. I like to spread them on a cookies sheet and freeze them quickly. In Wisconsin, it is easy this time of year - we just pop it on the porch and let the chilling winter air do it's work in less than 5 minutes. THEN I layer the frozen cakes into a container and pop into the freezer.

2 pancakes on a plate - zapped for 20 seconds and I have a hot breakfast for Miss Sarah on a school morning.

Pancakes
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 tsp cinnamon
2 tablespoons oil
1 tsp vanilla extract
2 cups Amish Friendship Bread Starter
1/2 cup milk (plus 1/4 cup if needed)
1 egg

Directions:
1.Combine flour, salt, baking powder, baking soda and cinnamon in a large mixing bowl.
2.In a smaller bowl, combine vanilla, oil, Amish Friendship Bread starter, milk, and egg.
3.Add ingredients of smaller bowl to the ingredients of larger bowl and mix on medium speed.
4.Spoon batter onto skillet or a greased griddle. Cook until bubbles appear on the surface, then flip and cook until browned on the other side.

Easy Peasy and super yummy!
